Add bacon to anything and it will taste better. That is never truer than with scallops. I do not care much for scallops as an appetizer or a dinner.

Put them over pasta, and I'm asking what that sponge thing is in my food. Sautee them in garlic and butter, and I'm asking where's the flavor.

Wrap them in bacon and suddenly they're transformed into a juicy, tasty, bacony delicious morsel that's perfect finger food at a tailgate or work party. These are damn good.

And because bacon itself has so much flavor, there's almost nothing to prepare. Wrap the scallop in bacon. Grill for about 6-8 minutes per side. Eat.

That's it.

The only twist is the optional sauce of jalapeno hot sauce and butter. But if you don't want the added kick, leave it out and these are still fantastic. This recipe comes from "The NFL Gameday Cookbook" by Dr. BBQ. I give these a 10 out of 10.

Here's what you need:

12 pieces of bacon
12 large sea scallops
2 Tbs butter
3 Tbs jalapeno hot sauce (I used jalapeno Tobasco)

    Wrap Scallops in Bacon

    Wrap the bacon over the top and cross over the sides of each scallop, securing with a toothpick.

    Grill Scallops

    Grill over direct medium heat or cook in a pan with butter over medium heat for around 6 minutes per side. When bacon is browned on one side, flip and repeat on the other until cooked through.

    Plate

    While the scallops are cooking, melt the butter and jalapeno hot sauce together. Plate scallops and drizzle sauce over them.
