Barbecue Journey with Dan ‘The Man’ — Spicy Pepperoni-Stuffed Mushroom
I'll say it right now: I hate mushrooms. HATE, HATE, HATE mushrooms.
And when you voted spicy pepperoni-stuffed mushrooms the winner for this week's recipe from Dr. BBQ's "NFL Gameday Cookbook," I was a little nervous.
These were actually pretty tasty, for mushrooms. Best yet, they were also incredibly easy.
Big Chuck Tries It
Here's what you need:
1 pound white mushrooms
1 cup finely chopped pepperoni
1/4 cup Parmesan
1 serrano chile, finely chopped
Directions
1. Clean and prepare mushrooms
Scrub and wash mushrooms. Remove stems and hollow out the inside, leaving just the cap.
2. Stuff mushrooms
Fill mushrooms with pepperoni, serrano and cheese.
3. Bake mushrooms
Bake at 350 degrees for 18 minutes
