One of the great things among many great things about chicken wings is how receptive they are to sauces and rubs and mixes and whatever you want to throw on them. Chances are if you've come across a sauce you like on a steak, it will taste good on a wing.

I've made peanut butter and jelly wings. I've made wings wrapped in bacon. I've made traditional wings with plain Jane hot sauce. I've tried them with "garbage sauce," honey mustard, sweet and sour, sticky, barbecue, honey barbecue, dry, breaded, baked, deep fried and grilled.

And they are all good.

The raspberry honey mustard chicken wings made this week could be served in any wing joint. The sauce is incredible, and the wings were crisp and delicious.

Another great thing about wings is that it doesn't make a heck of a lot of difference how you cook them as long as they get cooked. Most of the chicken wing recipes in "Ribs, Chops, Steaks & Wings" by Dr. BBQ go like this: Grill the wings, put this sauce on them when you're done.

Grilling is even optional. Just cook the wings however you like and put this sauce on them. It is a winner as long as you like mustard.

This wing sauce is the first of the 13 recipes I've made that truly transitions from one flavor to the next. First you're hit with raspberry, then a brief punch of honey before the mustard hits. But just when you're about to purse your lips from the mustard sting, the honey comes back to smooth it all out.

I will make these again. And again. And again. These get the first 10 out of 10 from me.

Here's what you'll need:

Chicken wings

The Chicken Wing Rub:
2 tsp Chili Powder
2 Tbs Onion Powder
1 tsp Ground Cumin
2 Tbs Salt
2 Tbs Garlic Powder
1/4 tsp Cayenne Pepper
2 tsp Black Pepper
2 Tbs Paprika
1 tsp Lemon Pepper
2 Tbs Sugar in the Raw (I used Domino Washed Raw Cane Sugar)

Sauce:
1/4 cup seedless raspberry jam
1/3 cup yellow mustard
1/3 cup Dijon mustard
1/4 cup honey

Directions

1. Make the Rub

Combine rub ingredients, mix and store in airtight container. (Not pictured below is the lemon pepper).

2. Prepare wings

Cut the tips of the wing and separate at the joint. Then season the wings with the chicken wing rub.

3. Grill wings

Grill on medium heat for 25 minutes, turning often, until wings are crispy and cooked through. (For baked wings, bake at 375 for 30 minutes. Turn wings and bake at 375 for another 30 minutes.)

4. Make sauce

While the wings cook, make the sauce by melting raspberry jam over low heat. Once melted add the mustards and honey. Keep warm on very low heat until wings are done.

5. Plate wings

Remove wings from grill into bowl. Pour raspberry honey mustard mix over top and toss to coat. Then, plate your wings.
