Easy Balsamic Veggie Recipe

This is my favorite recipe to make when I have a lot of veggies and don’t know what to do with them. It is so easy. All you have to do is cut, season, throw them on a pan, and let your oven do the work! I love these balsamic vegetables alone as a side, or even cut up and thrown in some pasta with lots of parmesan cheese. This could also be a perfect side for your Thanksgiving dinner!
You can use any veggies you’d like, but here is what I used:
- Zucchini
- Broccoli
- Onion
- Sweet bell peppers
- Asparagus
- Mushrooms
- Garlic powder
- Onion powder
- Salt
- Pepper
- Olive oil
- Balsamic vinegar
Begin by cutting up your vegetables the way you are intending to serve them. I cut them in smaller pieces, but sometimes I leave the slices bigger, and leave the asparagus as is. Put all the vegetables in a large zip lock bag. Add about 2-3 Tbsp. of olive oil; enough to evenly coat. Now it’s time to season! Add all of your seasonings depending on how strong you want you veggies to taste. I like to add a lot of garlic powder just because I love the taste of garlic. Close, and shake up the bag to make sure they are all evenly coated. Add about ¼ cup of balsamic vinegar….shake it!!
You can leave the vegetables in the fridge to marinate for 30 minutes, or just throw them on the pan right away. Bake on 350 degrees for 20-30 minutes. Your house will smell insanely amazing.
I could eat two big bowls of these delicious veggies! (I totally have and it was great)
