Beef on Weck is a regional sandwich with roots in old buffalo.  Seems bartenders in the gin joints along the Great Lakes waterfront area wanted to keep their bar patrons hanging around for "just one more."  So they sliced up roast beef, served it up in a heavily salted roll and that did the  trick.  Their thirst hollering for a sip, one more beer was usually ordered (or 2 or 3).  Today the beef on weck (a salted kimmleweck roll) is a food icon on pair with Buffalo's sponge candy, Anchor Bar chicken wings.  Yes Buffalo is a fantastic food city.

Here we try the impossible.  Trying to find the best Beef on Weck sandwiches in Western New York.  Yup, impossible.  So lets just say that these are among the best.  They range from elegant fancy sit-down restaurants, to bars and taverns in the old neighborhoods, to outlying towns and villages a few miles from Buffalo, like Williamsville, Lancaster, and even East Aurora.

No matter your taste, these are all worthy of a tip of the hat, and maybe even worthy of another beer for the road.
