
Vestal Qdoba Restaurant Announces Opening Date
After years of planning and a series of unexpected delays, a Qdoba restaurant on the Vestal Parkway is about to open its doors.
Catherine Cornelius, one of the owners of the new business, said training for managers and other employees will be getting underway in the coming week.
The Vestal restaurant will be the 20th Qdoba Mexican Eats location in New York state and the first in the Binghamton area. The nearest location is at the Syracuse airport, which opened last February.
The new Vestal Parkway eatery is located across from the Town Square Mall and just east of a Hoffman car wash.
The Vestal town planning board approved plans for the Qdoba restaurant in September 2022. Some site work started the following year but construction of the 2,200-square-foot building was delayed.
Cornelius said all of the necessary equipment now is in place and she's looking forward to opening day.
The place has indoor seating for 40 people and there'll be room for about 20 more customers on the patio, which will open when weather permits.
Cornelius said the soft opening for the restaurant now is scheduled for December 15. The business will be open seven days a week.
Although some Qdoba locations feature a breakfast menu, the Vestal unit won't offer that at the beginning. Breakfast items may be available in the future.
